These Wholemeal Peanut Butter Cookies are an easy, satisfying snack made with fibre-rich oats and legumes (yep — peanuts are technically legumes!). Packed with gut-loving fibre, healthy fats, and anti-inflammatory benefits, they’re the perfect afternoon pick-me-up that your gut will thank you for.

Wholemeal Peanut Butter Cookies

Makes: 12 cookies

Ingredients

  • ¾ cup wholemeal flour
  • 1 tbsp chia seeds
  • ½ cup natural peanut butter
  • ½ ripe banana, mashed
  • ⅓ cup white beans, mashed or blended until smooth
  • ¼ cup maple syrup or honey
  • ½ tsp cinnamon (optional)
  • ¼ tsp salt
  • 1 tsp baking powder

Instructions

  1. Preheat oven to 175°C and line a baking tray with parchment paper.
  2. In a bowl, mash the banana and beans until smooth.
  3. Stir in peanut butter, maple syrup, and vanilla extract (if using).
  4. Mix in wholemeal flour, chia seeds, cinnamon, salt, and baking soda until a dough forms. If too dry, add a teaspoon of water or plant milk.
  5. Scoop 1 tbsp of dough per cookie onto the baking tray. Flatten slightly with a fork.
  6. Bake for 10-12 minutes until golden brown. Let cool before enjoying!
     

These cookies are soft, naturally sweet, and packed with fibre from the oats, banana, and beans.
