Super Quick Plan B Lentil Bolognese

Made with items that you can keep stocked in your pantry, this lentil bolognese is the perfect Plan B meal for when you need to prepare something quick with items you have on hand! Not to mention, it is a budget-friendly, easy 'meat-free' meal that you'll have on high rotation!
Ingredients (Serves 2-3):
- 1 can (400g) lentils, drained & rinsed
- 1 cup passata
- 1 tsp Italian herbs
- Optional add-ons: garlic powder, paprika, chili flakes
- ½ cup cooked pasta (or microwavable high-fibre pasta)
- Mixed leaf salad bag
- Balsamic vinegar & olive oil (for dressing)
Method:
- Heat a pan over low-medium heat. Add the passata, Italian herbs, and any optional add-ons. Simmer for 2 minutes.
- Add lentils and cook for another 5 minutes.
- Microwave the pasta as per packet instructions.
- Toss the salad with a drizzle of balsamic vinegar & olive oil.
- Serve the lentil bolognese over pasta with the side salad.
