Sweet Potato & Black Bean Spicy Nut Tacos combine ingredients to boost your mood and feed your gut bugs!

Serves 4

Ingredients:

Tacos:

  • 2 medium sweet potatoes, peeled and cubed
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1/2 tsp chilli powder (adjust for spice preference)
  • 1 can black beans, drained and rinsed
  • 1 yellow capsicum, thinly sliced
  • 8 whole wheat tortillas

Spicy Nut Mixture:

  • 1/2 cup raw walnuts, roughly chopped
  • 1/4 cup raw almonds, roughly chopped
  • 1/4 cup raw cashews, roughly chopped
  • 1 tsp chilli powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper (optional for extra heat)
  • 1 tbsp olive oil

Guacamole:

  • 1 ripe avocado
  • Juice of 1 lime
  • 1 tbsp olive oil
  • 1/4 tsp garlic powder

Toppings:

  • Fresh cilantro, chopped
  • Pickled red onions
  • Shredded lettuce
  • Hot sauce (for extra spice)

Instructions:

  1. Preheat your oven to 200°C. Toss the cubed sweet potatoes with olive oil, smoked paprika, cumin & chilli powder. Spread them in a single layer on a baking sheet and roast for 25-30 minutes, flipping halfway through, until tender and lightly crispy.
  2. Heat a small saucepan over medium heat. Add the drained black beans and season with a pinch of cumin and lime juice. Warm through for about 5 minutes, stirring occasionally, then set aside. Add the yellow capsicum to the same saucepan and sauté for another 5 minutes.
  3. In a bowl, combine the walnuts, almonds, and cashews. Add olive oil, chilli powder, smoked paprika & cayenne pepper on the nuts and toss to coat evenly. Spread the nuts on a baking sheet and roast at 175°C for 10-12 minutes, stirring halfway through to ensure even toasting. Once golden, remove from the oven.
  4. In a bowl, mash the avocado and mix with lime juice, olive oil, garlic powder, and salt. Stir until smooth.
  5. Warm the tortillas in a skillet or microwave. Spread the guacamole on the tortillas and add a layer of roasted sweet potatoes, followed by a spoonful of black beans, lettuce, pickled onions and any other toppings like cilantro. Sprinkle the spicy walnut mixture on top for a flavourful, crunchy addition.
  6. Squeeze some lime juice over the tacos for extra zest and savour these nutrient-dense, vegan mood-boosting tacos!
