Gut-Friendly, Hormone-Supporting Sweet Potato & Carrot Loaf

This warm, spiced loaf is packed with fibre, healthy fats, and antioxidants—nourishing your gut and supporting balanced hormones. Perfect for digestion and overall well-being!

Ingredients:

  • 1 cup mashed sweet potato (about 1 medium, roasted & mashed)
  • 1 cup grated carrot (about 1 large)
  • 1 ¾ cups whole wheat flour (or oat flour for gluten-free)
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp salt
  • ⅓ cup agave/maple syrup
  • ¼ cup applesauce
  • ½ cup milk
  • 1 tbsp apple cider vinegar
  • 1 tsp vanilla extract
  • ¼ cup chopped walnuts or pecans (optional)
  • ¼ cup chopped dates

Instructions:

  1. Preheat oven to 175°C. Line a loaf pan with parchment paper or lightly grease it.
  2. In a small bowl, mix almond milk and apple cider vinegar. Let sit for 5 minutes.
  3. In a large bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  4. In another bowl, mix mashed sweet potato, grated carrot, maple syrup, applesauce, and the milk mixture.
  5. Combine wet and dry ingredients until just mixed. Fold in nuts and raisins if using.
  6. Pour the batter into the loaf pan and smooth the top.
  7. Bake for 45-50 minutes, or until a toothpick inserted comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Serving Ideas:

  • Spread with almond butter, yoghurt, or have on its own!
