Vegan Walnut Pesto

Our vegan walnut pesto is rich in mood-boosting and gut-friendly ingredients. It's perfect for pasta, spread on toast, or used as a dip for fresh veggies. 

Ingredients:

  • 1 cup fresh basil leaves
  • 1/2 cup walnuts
  • 2 cloves garlic
  • 1/4 cup nutritional yeast
  • Juice of 1/2 lemon
  • 1/4 cup extra-virgin olive oil
  • Salt and pepper, to taste

Instructions:

  1. In a food processor, combine basil, walnuts, garlic, nutritional yeast, and lemon juice. Pulse a few times to break down the ingredients.
  2. With the food processor running, slowly drizzle in the olive oil until well combined.
  3. Taste and adjust with salt and pepper as needed.

Serving Tips: Use this pesto on pasta, spread it on toast, or as a dip for fresh veggies. Store leftovers in an airtight container in the fridge for up to a week, or freeze it using an ice cube tray!
