Vegan Walnut Pesto
Our vegan walnut pesto is rich in mood-boosting and gut-friendly ingredients. It's perfect for pasta, spread on toast, or used as a dip for fresh veggies.
Ingredients:
- 1 cup fresh basil leaves
- 1/2 cup walnuts
- 2 cloves garlic
- 1/4 cup nutritional yeast
- Juice of 1/2 lemon
- 1/4 cup extra-virgin olive oil
- Salt and pepper, to taste
Instructions:
- In a food processor, combine basil, walnuts, garlic, nutritional yeast, and lemon juice. Pulse a few times to break down the ingredients.
- With the food processor running, slowly drizzle in the olive oil until well combined.
- Taste and adjust with salt and pepper as needed.
Serving Tips: Use this pesto on pasta, spread it on toast, or as a dip for fresh veggies. Store leftovers in an airtight container in the fridge for up to a week, or freeze it using an ice cube tray!
